Ahhh, Summer! That time of year when the sun is bright, the leaves are green, and the temperature is often hot enough to make food less than appealing. I find myself eating light during this time of the year. My diet is filled with fresh produce and many nights salad is the most I can make myself “cook” for dinner. There is nothing wrong with this, and I genuinely enjoy all of the fresh fruits and veggies, but as someone who loves to cook I am always on the hunt for summer friendly dishes.

I found these wonderful recipes a while ago and tried them out. They are delectable and delicious! It not only gave me something fairly simple to make, but also provided a nice change to my usual diet. I am in love with the lemon pasta (though I may have used a touch too much lemon the first time). They are uncomplicated recipes that you can tweek to your personal tastes. Don’t be afraid of using a different type of fish either. Any type of white fish should work well with this recipe.
