Another excursion from the Foodee. One thing about me, I am often health conscious when I cook. I figure, why not? If I can make food that is both healthy and delicious, I’m going to go for it! Of course not everyone loves a steady diet of vegetables, so to treat those meat and potato lovers (which I do admit to being) and thank them for eating all the experiments I put on the table, I like to treat them once in a while. This was one of those nights. I wanted to make something a little special, but still low key. Meat and carb heavy, (but still relatively healthy) and easy to put together. And of course, it wouldn’t be a real treat without bacon.

The answer? Stuffed chicken breast wrapped in bacon. Oh yes! Here’s my recipe.

Filling:

  • 3 heaping tablespoons cream cheese – 1 per breast
  • 3 green onions – 1 per TBSP of cheese
  • 1 Tbsp grated smoked gouda cheese (optional-I just had some on hand)
  • 1 tsp garlic powder or one clove fresh garlic, minced

Mix together well

Other Ingredients:

1 chicken breast (flattened) per person

2.5 to 3 strips of bacon per chicken breast

And Salt and Pepper to taste

 

First, season both sides of your chicken with salt and pepper.  With out this the chicken will be very bland despite the bacon and cheese.

Second, spread the cheese filling over each breast evenly. (About one heaping tablespoon should do)

Next, before rolling your chicken breasts get your bacon laid out and ready. This way your can do all the rolling at once.

Begin rolling your breasts, preferably starting from a thinner section.

Once the chicken has been rolled, grab your bacon and begin wrapping in the same direction you rolled the chicken. Make sure the bacon overlaps itself a bit to ensure that your wraps will not unroll.

(Toothpicks should not be needed to keep it together, but placing one through each end of your chicken breast may help to keep the filling from spilling out)

Bake at 400 degrees Fahrenheit  for 30 to 40 minutes. Then move your oven rack up and broil for five minutes or until bacon is crisp.  (Make sure your chicken is done cooking before broiling it as it only helps to crisp the bacon)

 

Well, this dish was super tasty and really, very simple to make. I chose to serve it with roasted potatoes and asparagus that I threw in to broil at last minute. Try it and let me know what you think of this recipe and if you come up with any fun ideas to jazz it up.
